GRILLED CHGICKEN WINGS WITH SUYA SPICES



Coat your chicken wings with the irresistible flavors of Suya spice, a seasoning blend popularized by West African street food. A tasty marinade always made with a base of ginger, chili, and ground roasted peanuts. With lemon and oil, this delicious marinade gives chicken wings a nice touch. Toasted until crisp and topped with a blend of honey and Suya spices, these wings have an unmistakable spicy and smoky, nutty taste.

INGREDIENTS

  • 2 lbs (1 kg) chicken wings

  • 1 tbsp (120 ml) West African suya spice blend

  • 60 ml lemon juice

  • 60 ml olive oil

  • 30 ml honey

PREPARATION

  1. Place the chicken wings in a large resealable plastic bag. In a small bowl, combine 2 tbsp. (30 ml) suya spice blend with lemon juice and olive oil. Add the suya marinade to the bag of wings. Close tightly. Massage the wings for 5 minutes to penetrate the marinade, turning the bag often. Refrigerate for 30 minutes. Remove the wings from the marinade. Discard the rest of the marinade.

  2. Grill the wings over medium-high heat for 15 to 20 minutes or until cooked through, turning frequently.

  3. Meanwhile, combine honey and 5 tbsp. (75 ml) of the suya spice blend in a large bowl. Transfer the cooked wings to the bowl while still hot, and toss to coat. Sprinkle the wings with the rest of the suya spice blend (1 tbsp or 15 mL) and serve.

  4. When ready to serve, garnish the bottom of a serving dish with lettuce leaves. Stack a mountain of Rice in the middle. Garnish with chopped cilantro and hard-boiled egg slices.

COOKING TIPS

  • Suya spice blend is a classic seasoning in West African cuisine, especially in Nigeria. These are rubbing spices typically prepared from peanuts and spices, such as ginger and cayenne, crushed or ground. The fragrant, nutty-flavored blend is commonly used to season beef and chicken kebabs, but it's also great with lamb and Fish. It can also be added to marinades, sauces, and dressings.

  • Replace the wings with giant prawns, and you will have delicious West African-inspired shrimp to peel on the plate.

  • Grill red pepper slices until they start to blacken, and toss them into the wings to add color and texture.
