A delicacy popularly known among the Efik/Ibibio Tribe in Nigeria, Edikanikong is mainly vegetable soup which is very delicious, nutritious and full of essential vitamin, good for weight loss diet.
Ingredients include the following:
1kg pumpkin leave /Spinach/ collard green
500g waterleaf
1kg Assorted Meat
Ponmo
200ml (2cups) Palm Oil
1 medium onions
1 cup of periwinkle
Stockfish as desired
2 medium dried fish
Fresh habanero pepper
1 cup of blended crayfish
Knorr seasoning for taste
Salts
STEPS TO FOLLOW
first picked and wash the vegetables nicely allow to drain out the water, placed each veggies in separate bowls
Clean the meat seasoned and garnish with fresh pepper and onions allow to cook till tender, allow the meat simmer with little water leaf as waterleaf or spinach and palm oil will generate broth for the soup
Add the waterleaf or spinach and add palm oil, add periwinkle, blended pepper stir all together, allow to cook for 3-5 mins do not over cook the veggies
Then add ugwu or collard green, add knorr seasoning cover the pot and allow 4-5mins
Then Add the blended crayfish, taste for salt stir together allow 2mins then is ready
Served with Eba, pounded yam
For diet serve with wheat, Quick oat
